Yellow oysters have a sweeter a nuttier taste than blue oysters. They also have a more delicate texture. You get a few different textures from them; the caps are delicate, the stems are crunchy and the base is almost spongy. They are very good with pasta, stir-fry, ramen, risotto, chicken, fish or in any dish that calls for mushrooms. A very flavorful mushroom. Keeps in the refrigerator for about 5 days.
